Is it possible to track clicks of free listings? Is this what ClickTracks does?

Absolutely. Tag the individual keywords used and track their effectiveness and the visitor trends through your site.

ClickTracks will provide you with stats on the traffic generated by SE/directories and other sources such as links on other sites, etc.
I have not had a chance to use ClickTracks, but from the demo I've seen, it offers a clean and easy-to-understand/intuitive interface and reporting system.
A log file analyzer of any sort will provide you with the data you desire...but just as for everything else...some are better than others

There is an advanced tagging function in the toolbar that allows you to set a parameter for isolating vcertain information, based on IP, keyword, page, etc. This is especially helpful for analyising individial keywords and determining the conversion rate for each. This helps to target the keywords that arec generating income and those that are not.
I would also suggest taking advantage of the free online classes that ClickTracks offers. It is an invaluable service to be able to interact directly with the developers of the product and the capabilities it performs.

One more question, then - how far will one of these log file analyzers track a click? For instance, can I see that this click, at Google, went first to this page, then to this page... and ended up resulting in a sale?

They should track the visitor until they leave your site (which could be the result of a sale).
Your log files basicly track every single request made from a persons IP (loading a page, image, etc)... these analyzers associate all the log entries from that IP that are close to eachother (less than 15 minutes apart, for example) and assume it is the same person. You should be able to see the exact order the person viewed your website, time spent on each page, etc... can give you some great insight on how people browse your site.
For example, you could see that the majority of the people place something in their cart, but leave at a certain part of the checkout process which will let you know you may want to re-evaluate what the users sees/does at that point in the checkout.

Usually copanies that you have paid agreements with (like PPC or Paid Inclusion) will give you statistics as far as how many impressions your listing has gotton, but there is nothing to my knowlege that will allow you to check this for free listings.
